Ingredients

1to 1.5 lbs of carrots

1 cup (or so) chicken broth

3 Tbsp butter

3 Tbsp flour

1.5 to 2 cups milk

1/2 cup cheddar cheese + extra to sprinkle on top

1/4 cup parmesean cheese

1/2 onion

2-3 cloves of garlic

Salt & pepper

Savory Cheesy Carrots

This recipe was passed to me by a wonderful woman in my herb club back in Montana. I remember her as a delightful soul and a fantastic cook!

1. Pre-heat oven to 350

2. slice carrots and add to frying pan with oil coating the bottom, just enough to stop sticking

3. Saute carrots for about 4 minutes. Then add onions and stir for another minute or 2 until fragrant.

4. Add chicken stock to steam the carrots and cook just until tender

5. Remove carrots from pan (leave behind any remaining liquid), and place them in a baking dish. Set aside. Then add butter to the pan and allow it to melt.

6. Stir in 3Tbsp of flour to make a paste and then add in the milk and stir until the sauce thickens.

7. Add in cheddar cheese and parmesean cheese and crushed cloves of garlic into the sauce and allow it to melt.

8. Pour the sauce over the carrots in the baking dish and top with a light layer of remaining cheese.

9. Bake until the top is bubble and starts to turn a little brown - about 15 minutes, I think
