Ingredients

  • 3–4 boneless, skinless chicken breasts (about 1 lb) (I used a small whole chicken and roasted it in the oven)
  • 1/2 cup pesto sauce
  • 12 soft slider buns (we used just 6 brioche buns from Vanderwaal's)
  • 2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 - 1.5 cups mushrooms (our addition)
  • 1 cup of thinly sliced red onions (our addition)
  • 2 tablespoons olive oil

Original recipe sourced from eatneatfood.com. I added a couple minor things.

  1. Preheat oven to 375°F (190°C) and prepare a baking dish with nonstick spray.
  2. Cook seasoned chicken breasts (salt, pepper) in a skillet with olive oil over medium heat for about 6-7 minutes per side until fully cooked. Let cool, then shred. Toss with a little garlic powder to taste
  3. Sautee Mushrooms and onions in a separate pan while you cook the chicken
  4. Slice slider buns in half horizontally. Spread pesto on the bottom half and layer with the chicken, mushroom mixture and mozzarella cheese.
  5. Place the tops back on the buns, brush with olive oil (or butter), and sprinkle Parmesan cheese on top.
  6. Bake for 10-15 minutes or until bubbly and golden brown.
