Ingredients
2 medium zucchinis diced (chunky)
1 lb ground beef (or ground turkey)
1 medium onion, chopped
2 cloves garlic, minced
1 can (15 oz) black beans, drained and rinsed
1 cup corn kernels (fresh, frozen, or canned)
1 packet taco seasoning
1 cup diced tomatoes (fresh or canned)
1 tbsp olive oil
Salt and pepper, to taste
Fresh cilantro, for garnish
Shredded cheese, for topping (optional)

One-Pan Taco Zucchini Skillet

Heat the olive oil in a large skillet over medium heat.
Add the chopped onion and garlic and cook for 2–3 minutes until softened and fragrant.
Add the ground beef and cook until browned and no longer pink, about 5–7 minutes. Drain excess fat if needed.
Stir in the chopped zucchini, black beans, corn, tomatoes & heat through
Serve with cilantro and shredded cheese. Just a couple minutes here or the zucchini will get mushy - and that's not nice.
